These pancakes can be made in under 5 minutes at home…and they’re packed with protein, fiber, and free of any added sugars!

BANANA CHOCOLATE PROTEIN PANCAKES
feat. Philosophie Chocolate Superfood Powder!!
Life sure has been moving’ recently. I’m trying to figure out my plans for the upcoming year (dietetic internship? oh boy!), plus I got a puppy!!!!! Don’t worry, many pics will follow…Work is great, life is great, and what’s even greater? Eating these pancakes today. I absolutely love sleeping in on Sundays and slowly getting out of bed, thinking of what delicious breakfast I will make. A craving for pancakes hit me today, and I decided to make some simple ones at home. These are the PERFECT fuel before I go on a long run this afternoon. Filling, decadent, yet healthy and more natural than store-bought gluten free pancake mixes. Not to mention they’re CHOCOLATE FLAVORED. You can’t get much better than that…
This recipe is an easy recipe that’s fun to change around and make little tweaks here and there. Fall time? Add in some canned organic pumkin and change the powder to a vanilla protein powder. Craving apples and cinnamon? Instead of banana, add in mashed ripe apples or applesauce and tons of nutmeg, cinnamon, and allspice. Want to add chocolate chips? Go for it! These pancakes are simple to make and the main ingredients are things I always keep in my house (eggs, oat flour, banana, protein powder). Get pancakes on the table in 5 minutes and you will surely impress anyone (plus they will be so surprised when they find out how healthy they are!).
- Serves: 3 pancakes
- Serving size: 1 pancake
- ¼ cup gluten free oat flour
- 3 TBSP Philosophie Cacao Magic Superfood Powder
- 1 egg
- 1 banana (1/2 for pancake batter, ½ for toppings)
- dash of sea salt
- dash of cinnamon
- 1 TBSP Powdered Peanut Butter (PB2)
- 1-2 TBSP water
- 1 TBSP nut butter of choice (optional)
- Mix all ingredients except water in a medium bowl until blended well.
- Add in 1 TBSP of water at a time, just until reaching a perfect pancake batter consistency.
- Spray large skillet with non-stick cooking spray and heat on medium.
- Pour batter evenly to form 3 pancakes.
- Flip pancakes after 1-2 minutes or until able to be picked up with a spatula cleanly.
- Once cooked, plate pancakes and add 1 TBSP almond butter or nut butter of choice, and drizzle with Walden Farms' Zero Calorie Pancake Syrup.
- Top with ½ sliced banana.
