Oh my goodness. I have no words.
Yes, I may be a bit late to finally jump on the “nicecream” aka (not-icecream) vegan ice cream bandwagon…..but I am never going back! This is one of the best desserts I’ve had in a whiiiile. And I’m pretty serious when it comes to dessert, no playing around when it comes to the sweet stuff. As I’ve been eating more plant-based lately, I decided to use the massive amounts of frozen banana chunks in my freezer and put them to good use by making this recipe. I just threw in some frozen banana chunks to my food processor, then added some shredded coconut, cinnamon, and unsweetened vanilla almond milk, and viola! This perfect blend of non-dairy ice cream was born. I am in food heaven and I’m sure you will be too once you try this. 🙂
- Serves: 2 servings
- Serving size: ½ of total made
- Calories: 267
- Blend first 4 ingredients in a high powered food processor until blended well. Then, slowly add in almond milk TBSP by TBSP until mixture has reached a more smooth, yet still thick consistency (like ice cream 🙂 )
- Blend until well blended, then spoon mixture into serving bowl.
- Top with granola and drizzle with date syrup.
The most perfect blend of sweet dates, creamy banana and coconut, with consistency JUST like ice cream! You can make a ton at once and store it in an airtight container in the freezer to have it on hand for multiple treats. And treats you don’t have the feel guilty about!
Totally vegan, gluten free, healthy, and with no artificial sweeteners. All natural plant-based deliciousness 🙂
You can also play around with various toppings. This granola was just one I had on hand (and not to mention it’s my absolute favorite…) Other delicious toppings could be raw almonds or any nuts, mulberries, strawberries, more shredded coconut, cacao nibs or chocolate chips, really anything you want!
