A month or two ago I was asked to compete in a “Clean Eating Showdown” for the delicious product called Elli Quark. Basically, there were 5 contestants and we all received a mystery box of 5 different ingredients, one being a certain flavor of the Elli Quark. Then, they were to give us a theme and we were to create a delicious and creative recipe from the mystery ingredients! (Chopped, anyone?) Elli Quark is very similar to greek yogurt in taste and texture, but its technically cheese! Plus it is lower in calories and sugar, and higher in protein. The theme of the “Clean Eating Showdown” was Dips n’ Dippers. We received 1 sweet potato, 1 beet, 1 artichoke, a bunch of asparagus, and plain Elli Quark. We were to make delicious and creative dips using the Elli Quark and turn the raw veggies into dippers. We were allowed to add any “clean” ingredients we wanted to make our desired recipe. It was so much fun! The winner was picked from instagram after submitting photos of our recipes.
For one of my dips, I made this simple mexican bean dip, filled with avocado, garlic, black beans, olives, and freshly shredded cheese. It turned out PERFECT. This dip was even useful as a quick pasta sauce for my zucchini noodles for a quick dinner one night. (I just added some olive oil to a spoonful of the mixture, topped the zoodles with it, and heated it up. Dinner in 5!) The dip was creamy, flavorful, and filled with a perfect blend of my favorite ingredients.
Easy Avocado Bean Dip
- 2 ripe avocados
- 3 garlic cloves
- 1 tsp extra virgin olive oil
- dash of sea salt
- dash of black pepper
- 1 container organic refried black beans
- 1 container plain Elli Quark cheese
- ¼ cup chopped olives, for topping
- ¼ cup chopped chives, for topping
- 1-2 oz shredded Monterey jack cheese, for topping
- Mix first five ingredients in a high powered food processor.
- Add mixture to bottom of a large bowl.
- Next, spread organic refried beans onto first layer.
- Spread Elli Quark (or sour cream if replacement needed) as third layer.
- Top with olives, chives, sea salt, pepper, drizzle of olive oil, and cheese.
- Dip tortilla chips, baked sweet potato chips, celery, etc and enjoy!
The plain Elli Quark really is a wonderful substitution for sour cream in any recipe. It tastes similar, but without any added sugar, plus it has a good amount of protein and a lower calorie count. You can’t beat it! Definitely check out their flavors and try some for yourself.
Now I’m off for a little R&R for the long weekend in Florida with my brother. I could not be more excited (if only Nathan were coming with!). Where he lives, the lazy beach mornings call for long jogs on the beach, fresh pressed juices, delicious burgers and sweet potato fries, and the best yoga class I’ve ever been to. I also know I’m going to hit up my FAVE health food store called Nutrition Cottage. I discovered it wayyy back when I was in high school and just starting out on my gluten free and clean eating journey. They have tons of gluten free foods, fresh pressed juices, smoothies made to order, wraps, etc. It literally is my haven!! Maybe I’ll return a bit tanner than my white self is now…let’s hope so. 😉
