Easy Avocado Bean Dip

Whip up this easy layered mexican dip for a healthy appetizer, or a simple dip to keep on hand for the family! Filled with nutritious ingredients, in addition to protein and healthy fats.
  • 2 ripe avocados
  • 3 garlic cloves
  • 1 tsp extra virgin olive oil
  • dash of sea salt
  • dash of black pepper
  • 1 container organic refried black beans
  • 1 container plain Elli Quark cheese
  • ¼ cup chopped olives, for topping
  • ¼ cup chopped chives, for topping
  • 1-2 oz shredded Monterey jack cheese, for topping
  1. Mix first five ingredients in a high powered food processor.
  2. Add mixture to bottom of a large bowl.
  3. Next, spread organic refried beans onto first layer.
  4. Spread Elli Quark (or sour cream if replacement needed) as third layer.
  5. Top with olives, chives, sea salt, pepper, drizzle of olive oil, and cheese.
  6. Dip tortilla chips, baked sweet potato chips, celery, etc and enjoy!
