Wow does time fly or what?
I feel like it was just yesterday I was moving in my tiny little apartment in the hottest town on earth, Statesboro, Georgia to begin my dietetic internship at Georgia Southern. SO weird to think back on the first day I met my roommates, and now they are my best friends. It’s already been 10 months (!!) and I will be finished up in mid July, eligible to take the RD exam (which holy crap, I haven’t even started to buckle down yet and study for…letzbehonest).
This internship has been an extremely fun, rewarding, sometimes stressful, and enriching experience that I wouldn’t trade for the world. Plus, when else do you get a chance to work on an organic farm for a week and get to try fresh vegetables straight from the earth? Totally awesome. I’ve found more areas I’m interested in, and some areas that I’m not so interested in (shout out to you, hospital food service). Now it’s time to gear up for the final few weeks and start buckling down for the biggest exam of my life. Let’s pray I pass the first time and find that dream entry-level job! As a side note, here’s some of my recent healthy eats as I’ve been bouncing around the state during the weekends and working at the Food Bank and UGA Cooperative Extension.
