Gluten free cake is hard to come by.
There are a few spots in the area that have taken me a while to discover that offer gluten free dessert, but it’s not a usual thing.
For instance, Gigi’s cupcakes only serve gluten free cupcakes on Fridays and Saturdays, Earthfare sells one flourless chocolate cake by the slice, and the best gluten free bakery EVER is an hour and a half away…
But, no worries my gluten free friends! I have found the answer to satisfy your every gluttonous (yet gluten-less) cake cravings!
(and in perfect bite-size form!)
Carly Shapiro, a 23 year old (obvi G-Free) girl living in NYC, runs a bite-size gluten free cake company called “Carly’s Better Bites”.
She developed Celiac disease at a young age, prompting her to want to replace some of her old favorite foods with gluten-free versions. The company is based in NYC, but luckily for us, we can order them online and get them shipped anywhere in the US! I ordered my own dozen, and it’s safe to say I devoured them within 3 days and they were delicious! A perfect option for those of us that need some gluten free treats every once and a while, and especially great for any events, birthdays, or parties.
I recently interviewed Carly to get a little more insight into who she is and all about her delicious little treats!
- Tell me a bit about your symptoms/how gluten affected you before you found out about your allergy.
C: Before finding out about my allergy, gluten took an extreme toll on my body. Being that I was young at the time, eating gluten also really affected my ability to learn in school. My brain seemed foggy a lot and it was hard for me to concentrate and retain information. Internally gluten destroyed my stomach. I had constant stomachaches/bloating and was always nauseous. A few other major symptoms I experienced were being moody and always tired, eating gluten made me very lethargic.
- Was it difficult cutting out gluten for you initially?
C: Yes! I was 10 years old when I found out I was severely gluten intolerant and there were hardly any gluten free options on the market. In fact, when I went out to eat, many waiters and waitresses did not even know what the term “gluten free” meant.
- How has your life changed since going gluten free/what has improved?
C: To say I feel like a different person would be an understatement. I have been completely gluten free for 6 years now and luckily the gluten free market has taken off and there are an endless amount of food options. The biggest changes I noticed after I stopped eating gluten completely is that I have much more energy, am a happier person all around and do not experience stomach issues anymore.
- How did you start with Carly’s Better Bites?
C: After graduation I accepted a job offer at a Public Relations firm where I was on the Fashion Team. I was thrown into the world of Fashion PR and although it was demanding at times, it was a great experience and I learned more than I ever could have imagined. That being said, after an endless amount of Baked By Melissa’s being brought into the office which I couldn’t eat, I decided to take my passion for gluten free baking to the next level. Ironically, a few days later my roommate asked me what “small treats” she could get me for my birthday since I can’t eat Laceycakes or Momofuku and that was all it took, the idea for Gluten Free cake bites was planted in my head! Growing up I did a lot of baking so I was confident that I was capable of creating delicious Gluten Free bites. I was so excited to start this adventure that I spent endless amounts of hours in the kitchen trying all different cakes, chocolates and toppings and after a few disasters, a ton of trial-and-error and many educational videos, Carly’s Better Bites was born!
- What has been the most exciting part of this journey of yours?
C: Nothing is more exciting than watching a product I created take off. It is awesome to hear all the positive feedback from customers and even more so, to see how grateful they are that a gluten free bite size dessert option has entered the market. I know I love the Bites but seeing others enjoy them is truly gratifying.
- For those of us that don’t live in NYC, how should we store our bites that we order? Fridge, counter, etc?
C: The Bites should ideally be stored in the fridge whenever possible. If for some reason this isn’t an option, keep the Bites in room temperature.
- What is your personal favorite flavor?
C: My personal favorite cake flavor is chocolate chip cookie dough. My favorite coating is dark chocolate and my favorite topping is gluten free chocolate oreo.
- How do you create a new flavor/ how does the bite-making process work?
C: My head is constantly spinning with new ideas for flavors and toppings, especially with the holidays coming up. Once I have an idea I buy the ingredients and it is just a trial-and-error game from there.
- How do you avoid gaining weight when you’re around all these delicious cake bites all the time?
C: Great question, haha! I am not going to lie, it is hard not to eat the Bites all the time but when I am around them constantly I get used to it, which makes it much easier to not eat them.
10. Lastly, what is your future goal for Carly’s Better Bites?
C: Expand, create another gluten free product, be featured in a major Magazine and maybe one day open a store front! I am very excited to see what the future holds for Carly’s Better Bites.
