Dragonfruit, AKA pitaya, packs a powerful punch of magnesium, fiber, riboflavin, and of course, GORGEOUS color. Pitaya bowls are easy to make and just as delicious to enjoy. Top with your favorite toppings and slurp down nature’s goodness!
Serves: 2 servings
- 2 cups frozen pitaya (dragonfruit)
- 1 banana, frozen
- splash or two of unsweetened almond milk
- toppings of choice (mulberries, coconut, granola, cacao nibs, goji berries, sliced fruit)
- Blend all ingredients in a high-powered blender until smooth. Top with desired toppings.
Use less liquid and more frozen banana when blending for a thicker, more smoothie bowl consistency, similar to frozen gelato.
As I’ve been in florida job hunting, I’ve pleasantly had some down time to make more fun blog recipes. Normally, I wouldn’t even be able to find pitaya when I lived in small town Statesboro, GA.
