Summer brings cold acai bowls topped with nutrient-packed goodness 🙂
Acai is a berry that reigns from South America, and is known for its high antioxidant properties. The acai berry tastes delicious blended with frozen banana and any other fruit. Not only is this breakfast beautiful, but it tastes incredible, too. Cold, refreshing, sweet, and customizable with any fun toppings. The perfect summer breakfast treat that’s healthy, too.
Acai berry may be difficult to find. I stock up at Whole Foods and keep them in the freezer.
Acai bowls are meant to be eaten with a spoon rather than sucked down in a glass like a smoothie. It is blended with less liquid so it is thicker, similar to frozen yogurt when it has sat out for a few minutes. 😉 Plus, eating rather than drinking signals your brain that you’ve actually had a full meal, so you’re more likely to be satisfied. Plus, eating the toppings is the best part!
- 1 acai packet, frozen
- 1 banana, frozen
- ¼ cup unsweetened almond milk
- 1 tsp honey
- 1 TBSP chia seeds
- kiwi, for topping
- 1 oz almonds, for topping
- ½ protein bar, crumbled for topping
- blueberries, for topping
- Hemp Heart Bites, for topping
- Blend first 4 ingredients in a high powered blender until smooth.
- Pour into bowl and top with toppings.
