Everyone is busy these days…
Between work, school, exercise, social life, family time, and getting adequate sleep, time management sure is tough and balancing all of these things can make healthy eating sometimes harder to accomplish. My life has been quite hectic lately – 8 hour internship work days + school work on top of that, not to mention driving between two different places. How do I manage to still eat healthy? Here are my top 3 favorite plant-based meals that are super simple to whip up anytime.
1. Spaghetti Squash with pesto, mushrooms, garlic, and parmesan cheese
Simply roast a halved spaghetti squash for 40 minutes or until brown in a 400 degree oven. Once roasted, scrape out the spaghetti squash with a fork, remove the seeds, and sauté with the rest of the ingredients in a medium pan until warm. Enjoy!
2. Zucchini noodles with spinach, hemp seeds, and tomato pasta sauce
Using a spiralizer, turn your zucchini into noodles, top with a handful of spinach leaves, the hemp seeds, seasonings, and pasta sauce. Take for lunch during your work or school day and simply microwave before eating!
3. Open-faced vegan burger with tomato and mozzarella
Purchase these amazing vegan beast burgers, keep in the freezer, and bring ’em out whenever you need a quick and healthy dinner. Sauté burger in a tiny bit of olive oil in a medium pan on medium heat, cook about 3 minutes each side, and top with lettuce and tomato slices. Drizzle with ketchup if desired. Slice the rest of the tomato and enjoy with mozzarella and a little salt and pepper.
4. Banana, kale, and mango breakfast smoothie
Blend together all ingredients in a high-powered blender for a powerfully healthy plant-based smoothie. Perfect for an on-the-go breakfast! This is one of my go-tos.
