Mmmm….spicy avocado toast.
Avocado toast is SOO versatile.
I usually just add ripe avocado to a piece of toast and add some lemon juice, salt, and pepper. But, recently I’ve been on a Sirarcha kick, and played around with avocado toast variations. And this is what happened, and it was DELISH!!(yes, I like my toast a little burnt…)
Avocados are a wonderful source of healthy fats to support brain function and healthy cholesterol levels.
Avocados are one of those fruits that is so difficult to get it at its perfect ripeness. When buying avocados, buy them when they are rock hard if you aren’t eating it for a few days, but if you are planning to eat it the next day or so, buy it when it is slightly soft, but not browning or able to dent.
The base: cut an avocado in half, and scoop out 1/4 of the avocado and spread it on top of a piece of toast.
My favorite gluten free bread for toast is Udi’s white sandwich bread. Buy it frozen! That way its freshest when you get it. I buy mine at my local Kroger grocery store.
Add salt and pepper, then top with sun-dried tomatoes and lemon juice.
