Springtime calls for crunchy, fresh, healthy, veggie-packed dishes
Ahh springtime…..farmers markets are back open, the weather is getting warmer, and veggies are coming into season! What a perfect time to spring clean your diet and jam pack it with some extra nutrient-dense veggies. This one’s so simple you can make it in 5 minutes and pack it for a quick lunch on the go. Or make it for dinner and pair it with some freshly baked salmon and a little quinoa on top. YUM!
This salad is a take on Nikki Sharp’s 5 Day Real Food Detox, full of healthy plant-based meals to help you feel less bloated, get glowing skin, and feel lighter in only 5 days. These foods naturally detox our bodies and take advantage of the detoxing effects of our liver. No crazy juice cleanses here (not healthy…)!
- 1 cup butter lettuce
- 1 handful spinach leaves
- ½ medium carrot, sliced
- ⅓ cucumber, sliced
- ½ small beet, sliced
- 2-3 radishes, sliced
- 2 broccoli florets, chopped
- 1 TBSP balsamic vinegar
- Add chopped veggies on top salad greens and drizzle with balsamic vinegar.
I drizzled vanilla fig balsamic dressing on mine…so delicious! Add any dressing you like, but try to stick to simple, wholesome ingredients such as oil and vinegar, a light vinaigrette, balsamic vinegar, or even a homemade dressing!Yum. Totally satisfying my crunch cravings. Remember to always fill your plate with a range of beautiful colors to get the most nutrition. This salad is an easy way to get those healthy habits started.
