The holidays go into the New Year, so you can indulge in just one more dessert that won’t leave you feeling like you’ve been naughty. This ice-cream is made from soaked cashews, which are FULL of healthy fats that keep you full, and can keep your heart tickering with strength. This dairy-free ice cream will have you stumped that it’s not real ice cream full of unhealthy fats. Indulge the right way with this super easy recipe!
This recipe makes about 5 servings with less than 200 calories per serving…much better than a scoop of real ice cream, but with ALL the flavor.
This creamy, dreamy ice-cream is full of healthy ingredients like cashews, banana, dates, peanut butter, and cinnamon. All come with rich flavor and rich health benefits. Plus, raise your hand if you love a good homemade ice cream recipe you can make without an ice cream maker! (your hands better be a-raisin’)
- 1 cup raw cashews, soaked overnight
- 1 ripe banana
- 2 pitted medjool dates
- ½ vanilla bean
- 1 TBSP Wild Friends Gingerbread Peanut Butter (can be bought off amazon.com)
- ¼ tsp cinnamon
- ¼ tsp allspice
- dash of sea salt
- After soaking cashews in water overnight (or for a minimum of 6 hours), place all ingredients in a high-powered blender or food processor.
- Blend on high until a rich, smooth consistency is formed.
- Place mixture into a bowl or dish to cover and freezer overnight.
- Let sit for ~10 minutes to soften before serving and enjoy!
This ice-cream can be made into SO many fun variations. Switch out the gingerbread peanut butter for vanilla coconut butter and add in a sprinkle of dark chocolate chips or cacao nibs for a vanilla chocolate crunch version. Or, add in a TBSP of raw cacao powder, nix the vanilla bean, and add some peppermint extract for a mint chocolate concoction. There are so many fun ways to switch it up!
Since the dates add in the natural sweetness, there is no needed for any other added sugar. You may switch the dates out for agave syrup, maple syrup, stevia, or coconut palm sugar for other healthy sweetening tricks.
