Ahhh…Thursday was the big Turkey day, my FAVORITE holiday.
I have always loved Thanksgiving as I get to travel to my family’s old farm in North Carolina and see many family members that I only get to see once or twice a year. It really is a day of love, laughter, catching up, eating amazing food, and being grateful for where we are in life and all of our blessings.
Also, I’m just happy to get off work for 2 days and be home for some much needed chill time!
To start off Wednedsay, I wasn’t too hungry as I ate a little bit later than normal last night cause I simply COULD NOT fall asleep (isn’t that the worst?!?). So before I headed to work I grabbed a (free!) coffee from Jittery Joes. I got a medium coffee with a little bit of sugar-free peppermint flavoring and a touch of steamed skim milk on top. ( low calorie but not boring and bland!) It was perfect :).
Later in the morning at work, I wanted a nice refreshing juice to give my body some yummy nutrients to prep for all my traveling //driving and sitting on my butt for a few hours in the car (and to prep for all the eating on thanksgiving!!). I drank a delicious juice blend of fresh pressed apples, carrots, cucumbers, celery, beets, romaine, kale, spinach, parsley, ginger, lemon, and cayenne pepper. OH YES! This was a fabulous way to start the day off in a healthy way. (PICTURED AT TOP) I simply can’t get enough of Journey Juice. It’s pretty much the only juice place here in Athens that juices fresh daily and offers their juices bottled. That way, I can grab 2 or 3 and have them within the following few days. Other juices sold at the grocery store are either pasteurized or aren’t as fresh or healthy. I’m basically ADDICTED to their “Nutty Joe”, a creamy blend of freshly made vanilla almond milk, dates, cinnamon, and espresso. (seen here and here). Its dairy-free and perfect.
After working for a few hours, I finally got hungry and made a quick bowl of gluten free oats with raw almonds and cinnamon to keep me going through the workday. My go-to.
Luckily I got off work Wednesday at 1:30, so I had plenty of time to get home to Charlotte that afternoon. It’s a 3 hour drive, but with traffic it ended up being 3 1/2. During the car ride I got hungry and snacked on some pomegranate seeds and a ThinkThin bar (not pictured) It’s basically like a candy bar, but at least its gluten free, sugar free and has 20g of protein in it!!
Dinner was simple because I was EXHAUSTED and wanted to go to bed early since I had to be up at 7:45 the next day to drive to our farm in Northern N. Carolina for Thanksgiving with the fam. I brought these leftovers from my apartment and ended up eating some of it. The bottom mixture is quinoa/broccoli/pom seeds/parmesan cheese. Baked acorn squash baked with agave and cinnamon went with it. It was pretty damn good for leftovers if I do say so myself….(although I may be biased) ðŸ™‚
Then, I couldn’t fall asleep and snagged a little slice of Gluten Free Carrot Cake aka HEAVEN!!! that my coworker made. She sent home some with me since I have gluten intolerance and loved it so much. I know I wouldn’t be eating any dessert at Thanksgiving, so I treated myself to a slice pre-thanksgiving at home. That counts, right?! She made the cake with King Arthur’s brand white cake mix and added carrots, walnuts, and raisins and topped it with organic cream cheese frosting. All homemade and delicious!
It was a day of some good eats! As for Thanksgiving itself, it was amazing as always. I didn’t eat too much, as a lot of dishes had gluten in it, and I’m not a huge fan of high-fat and unhealthy dishes (sausage balls? cheese dip? casseroles? not my thang…) BUT, I definitely enjoyed some baked turkey, ham, sweet potatoes, and lima beans/black eyed peas and boy were they good. I had the most fun drinking bloody marys, visiting with family members, walking around my farm, and shootin’ shotguns. It was a fabulous day in the great South. ðŸ™‚
