Welcome to a food blog created by a Registered Dietitian Nutritionist and Certified Personal Trainer. I’m Caroline, a passionate RDN working as a clinical and counseling Dietitian in Columbia, SC. I grew up in the South and was active throughout all of childhood, until around age 17 I suddenly struggled with intense gastrointestinal symptoms, fatigue, depression, etc. leading me to quit varsity soccer my senior year of high school. After seeing countless doctors and told it was “simply stress”, I was determined not to give up, knowing it had to be tied to what I was eating, as I felt horrible any time I would eat. After many years searching for the answer and studying nutrition on my own, I finally find out I had Non-Celiac Gluten Sensitivity. After cutting out gluten 100%, my symptoms completely went away as if it was night and day. This naturally led me to my passion for the healing powers of nutrition, as I can see how what we eat truly effects every part of our life. I received my Bachelor’s of Science in Dietetics from the University of Georgia and completed my Dietetic Internship at Georgia Southern University. I’ve worked as a clinical dietitian in an acute care hospital, private practice, long-term care, and more, leading me to my ultimate passion in Dietetics: one-on-one counseling & Intuitive Eating. I designed this blog as a creative outlet to bring simple, healthy eats to you and your family, and helping take the confusion out of the simple act of eating. I believe in eating ALL the foods, balanced eating, without counting calories, cutting out entire food groups (unless you have a food allergy of course), or following ____ fad diet. I am a Certified Intuitive Eating Counselor, and I truly light up when I am helping guide people towards a healthier relationship with food. I love eating nutritious food that makes me feel good, and you can often find me picking fresh vegetables from my garden. I believe that food is food, and it’s an important relationship to be sure we take care of, as we eat every. single. day! Outside of work and the kitchen, I enjoy hiking, skiing, live music, photography, and spending time with my husband, Brendan, my part maine coone cat, Clyde, and my black lab puppy, Willow.
