For the Donuts:
- 2/3 cup GF All Purpose Flour
- 1/3 cup Almond Flour
- 1/4 cup coconut sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
- 2 TBSP creamy nut butter (Justin’s Vanilla Almond Butter worked well)
- 1 TBSP maple syrup
- 1 TBSP melted butter
- 1/2 cup + 2 TBSP milk of choice
- 1 egg
For the Cinnamon Sugar Coating:
- 2 TBSP melted coconut oil
- 2–3 TBSP+ ground cinnamon
- 2–3 TBSP+ coconut sugar
- Preheat oven to 350 degrees and spray donut pan with non-stick spray.
- Add all dry ingredients to a large mixing bowl and stir until combined.
- Add all wet ingredients to a medium mixing bowl, and whisk until smooth and blended.
- Add wet mixture to the dry mixture, and stir until fully combined throughout.
- Spoon mixture into donut pans (fill about 2/3 full) and bake for 12-15 minutes, or until a toothpick comes out clean.
- Once donuts have cooled a bit, combine cinnamon and sugar into a small bowl, and melted coconut oil in a separate small bowl. Brush melted coconut oil onto top of donut, then dip donut into cinnamon sugar mixture, coating throughout. Repeat for all donuts.
