Cacao nibs are a fabulous way to treat those chocolate cravings – packed with fiber, magnesium, iron, and antioxidants, with a deep, dark chocolate crunch!
And what’s better than using protein powder in a smoothie is getting protein from whole foods, i.e. the chickpeas. A wonderful plant-based source of protein & fiber, two main players that contribute to satiety (aka feeling full & satisfied).
This creamy, dreamy smoothie tastes like chocolate chip cookie dough blended up, with a healthy twist! The most delicious way to sneak in a serving of veggies…you’ll be fooled!
- 1 cup frozen cauliflower florets
- 1.5 TBSP raw almonds
- 1 medjool date
- 1/8 cup unsweetened shredded coconut (or 1 TBSP coconut butter)
- 1 TBSP pure maple syrup
- 1/4 cup chickpeas, drained & rinsed
- 1–2 TBSP raw cacao nibs
- 1 tsp vanilla bean paste (or extract)
- 1 cup unsweetened almond, coconut, or oat milk
- dash of cinnamon
- dash of pink Himalayan sea salt
- 1 scoop collagen powder (optional)
Blend all ingredients together in a high powered blender until smooth.
