Avocado and greek yogurt give this the perfect consistency, with the satiating factor of fats. Keeping you fuller, longer!

An easy, and super refreshing summertime soup, served cold! Packed with healthy fats, protein, and hydrating cucumber. Just what your body craves in the heat! A light and healthy soup ready to cool you down on even the hottest of days.

Ingredients

1 cup plain 2% Greek Yogurt

1 avocado

1 cucumber

1/4 cup cilantro

12 jalapeños

1 lime, juiced

1/2 lemon, juiced

sea salt and black pepper, to taste (may need more than you think due to the water content of this recipe)

2 garlic cloves

1 cup cold water (start with 1/4 cup and add as needed for desired consistency)


Instructions

Add all ingredients to a high-powered blender or food processor (start with just 1/4 cup water) and process until smooth and creamy. Add additional cold water as needed for consistency.

Enjoy cold!


This cold, creamy soup is the perfect summer meal- refreshing, delicious, & healthy! I absolutely love the fresh taste of cilantro on top -definitely don’t skimp on the cilantro!Just a dash of herbs in a dish can truly take it up a notch.
