1/2 cup buckwheat groats (i.e. Bob’s Red Mill brand)
pinch of sea salt
1/2 cup+ milk of choice
2–3 TBSP chia seeds
2 TBSP cashew butter
1/2 tsp ground cinnamon
1/2 apple, diced into small pieces
handful raw walnuts, for topping
desired amount of maple syrup, for sweetening
- Divide buckwheat, salt, milk of choice, chia seeds, and cashew butter among 2 mason jars or bowls with lids, cover, and let sit in fridge overnight.
- Upon consumption, top each serving with diced apples, cinnamon, walnuts, and drizzle with maple syrup. Enjoy on-the-go for a healthy & delicious breakfast packed with whole grains!
