Cooling Cucumber Avocado Popsicles (veg)

When you live in a city with the nickname “Hot City”, you’ve gotta be prepared with cooling & refreshing summer treats. 

There’s nothing more refreshing than cucumber in my opinion, and the flavor shines when paired with lemon juice, basil, avocado, and honey. A real summertime healthy treat!

Description

These refreshing popsicles are the answer for those hot summer days. Healthy, delicious, & extremely hydrating! Both kids and adults will LOVE these treats.


Scale

Ingredients

2/3 avocado

1 1/2 large cucumbers

1 lemon, juiced

2 TBSP honey

dash sea salt

12 basil leaves


Instructions

Peel and chop cucumbers, then add to a blender. Add all remaining ingredients and blend until pureed.

Pour into popsicle molds and freeze for at least 6 hours, then enjoy!
