Simple, nourishing dehydrated Apricot, Date, & Cashew Butter Cookies are the perfect cookie! Packed with delicious fruit flavor, and extra protein from oats and cashew butter. These are an easy staple to keep on hand for a nutritious dessert or snack.
- 2 cups pitted medjool dates
- 1 cup dried apricot
- 1 cup creamy cashew butter (or any nut butter)
- 1/4 cup rolled oats
- dash cinnamon
- dash sea salt
In a food processor, process dried fruit until mixed together. Add in remaining ingredients and continue to process until a sticky dough forms.
Roll dough into small bite sized balls, and then flatten into cookies. Place on tray, spaced apart, in dehydrator.
Heat dehydrator to 145 degrees and dehydrate for 6-8 hours.
Store in an airtight container and enjoy!
