My chocolate cravings always kick in, and when they do this hits the spot every time! I love buying P.S. Snacks fudge cookie dough at my local health food store, but it’s SO easy to make at home! Filling with fiber and protein (hello black beans!), with a delicious creamy chocolate kick.
I sweetened this with a little bit of date syrup (my favorite!) and coconut palm sugar, but feel free to use any desired sweetener you enjoy!Print
Delicious, hearty fudge chocolate cookie dough. Perfect after the gym, as a snack, for a healthier dessert, you name it! GF & Vegan.
1 can low-sodium black beans, drained & rinsed
1/2 cup creamy peanut butter
1 tsp baking powder
1 TBSP coconut sugar
1 TBSP date syrup
2 TBSP raw cacao powder
1 TBSP coconut oil, melted
dash sea salt
1/4 – 1/2 cup vegan dark chocolate chips (I love a lot so I used 1/2 cup!)
Add all ingredients except chocolate chips to a food processor. Blend until smooth and creamy.
Let batter cool for a minute or two so the chocolate doesn’t melt, then fold in dark chocolate chips and enjoy!
