Everyone’s Favorite…..a Healthy Mint Chocolate Chip Smoothie!
This healthy mint chocolate chip smoothie is packed with fiber, vitamins, minerals, healthy fats, and protein to keep you full & satisfied until lunch, so you can focus on other things! This smooth, creamy breakfast is a great (& delicious!) way to sneak in some extra veggies. Often, if I know I’m not sure if I’m going to have many fruits or veggies during the day, I choose this smoothie (gentle nutrition!) so I can at least get in 3 servings in the morning. Easy peasy!
This creamy, dreamy smoothie tastes like Mint Chocolate Chip Icecream! Healthy, satisfying, and balanced – a great way to start your morning!
- 1/2 large banana, frozen
- 1 handful spinach
- 1 medjool date, pitted
- 1 cup frozen cauliflower florets (about 6 florets)
- 1 TBSP cashew butter (or raw cashews)
- 1 TBSP coconut butter
- 1 tsp peppermint extract
- a few fresh mint leaves
- 1/2 tsp vanilla extract
- 1/8 cup raw cacao nibs (+ more for optional topping)
- a few ice cubes
- 1/2 cup + almond milk (or liquid of choice) to blend
Add all ingredients into a high powered blender and blend on high until smooth and creamy. Top with extra cacao nibs if desired. Enjoy immediately!
