Healthy Mint Chocolate Chip Smoothie

This creamy, dreamy smoothie tastes like Mint Chocolate Chip Icecream! Healthy, satisfying, and balanced – a great way to start your morning!

Ingredients

  • 1/2 large banana, frozen
  • 1 handful spinach
  • 1 medjool date, pitted
  • 1 cup frozen cauliflower florets (about 6 florets)
  • 1 TBSP cashew butter (or raw cashews)
  • 1 TBSP coconut butter
  • 1 tsp peppermint extract
  • a few fresh mint leaves
  • 1/2 tsp vanilla extract
  • 1/8 cup raw cacao nibs (+ more for optional topping)
  • a few ice cubes
  • 1/2 cup + almond milk (or liquid of choice) to blend

Instructions

Add all ingredients into a high powered blender and blend on high until smooth and creamy. Top with extra cacao nibs if desired. Enjoy immediately!
