Ingredients

  • handful of fresh arugula
  • 1/2 red pepper, diced
  • handful of cherry tomatoes
  • 1 zucchini, shredded
  • 2 TBSP sliced almonds
  • 1 large carrot, shredded
  • dash of sea salt
  • dash of black pepper
  • 2 TBSP vanilla fig balsamic dressing (or other sweet balsamic dressing of choice)

Instructions

  1. Shred and chop vegetables that need preparation.
  2. Place all ingredients into a salad dish, top with salt and pepper.
  3. Drizzle balsamic dressing on top and enjoy!
