What a perfect time to spring clean your diet and jam pack it with some extra nutrient-dense veggies. This one’s so simple you can make it in 5 minutes and pack it for a quick lunch on the go. Or make it for dinner and pair it with some freshly baked salmon and a little quinoa on top. YUM!

Spring Super Crunch Salad (v)

  • 1 cup butter lettuce
  • 1 handful spinach leaves
  • 1/2 medium carrot, sliced
  • 1/3 cucumber, sliced
  • 1/2 small beet, sliced
  • 23 radishes, sliced
  • 2 broccoli florets, chopped
  • 1 TBSP balsamic vinegar


  1. Add chopped veggies on top salad greens and drizzle with balsamic vinegar.
  2. Enjoy!
