This fresh summer salad is light, refreshing, & healthy! Packed with fiber, vitamins, minerals, and plant-based fats & protein, just the combo you need to feel satisfied. Add some salmon or chicken for extra staying power!
- 2–3 cups butter lettuce
- 1 avocado, sliced
- 3–4 fresh figs
- 2 stalks celery, chopped
- 1 handful freshly sliced Parmigiano-Reggiano
- 1/8 cup sliced almonds or walnuts
- desired dressing of choice (my favorite? Just a mix of olive oil, garlic, and lemon juice)
Slice avocado, chop almonds, chop celery, and cut figs into bite-sized pieces. Add atop lettuce greens onto each of the two servings.
Top with any remaining ingredients and drizzle with dressing upon serving. Enjoy!
